Raspberry Cheesecake


I had the girls from work down for a come dine with me evening, I got rid of my husband and children for the night I started with some nibbles for my guests and cooked a curried chicken (which was a variation on a jamie oliver and a sainsburys recipe) served with wine and a raspberry cheesecake. The evening started at 1830 and finished at midnight.

The curried chicken I started 2 hours prior to my guests arrival and I used the slow cooker to cook in checking its dexterity every 15 minutes, preparing a medium sauce from scratch and slowing browning the chicken prior to adding to the sauce gave the chicken an slightly sharper flavour.

One hour prior to the finishing the main meal, I started to prepare the cheesecake, this took about 45 minutes to do and was really tasty the ingredients i used were:

1,5 kg (53 ounces) cream cheese or quark, room temperature (I used Valio 0,3 % fat quark)

12 cup (100 grams) granulated white sugar

2 tablespoons semolina

4 large eggs, room temperature

1/3 cup (80 ml) heavy whipping cream

100 ml lemon juice (1 lemon)

1 teaspoon pure vanilla extract

Topping:

4 tablespons raspberry sause
1 cup (240 ml) sour cream (I used 15% fat)

2 tablespoons (30 grams) granulated white sugar

1/2 teaspoon pure vanilla extract

raspberries for decoration (I used 14)

The food was finished off with quite a considerable amount of alcohol, an enjoyable night was had by all and i cant wait until being guest at my friends houses.
